Having been calibrated

a first question: how do you know that the pH is 8

My pool specialist tested it for me

OK . I think he test the probe

1. Dip your probe in water

2. Read the pH value

3. add vinegar or lemon juice to the water

4. Read the pH value again

The read pH value should drop by at least 1 to 3 pH

If the pH value does not move then your probe is out of service
