I did the water test with vinegar, I went from 8.6 to 5.4?
Does that mean my probe is working? I hope so?

The probe is indeed sensitive to acidity, unfortunately, I think your device is rejecting the calibration because the value 8.6 is too far from 7. Try to temper your probe in pH 7

I did it and then put my probe back in place and after a few minutes I am now stabilized at 7.4
